The brake level is definitely adjustable. I had to have my raised at my 600 mi. maintenance. I did not do it myself so i don't know what to tell you. But I did want to let you know that it should not be an issue about how you feel about your purchase.
BTW, as with most matters of personal preference, I can't understand why you would want the pedal level with the peg. I found that much more awkward.
